Congee is a warm, comforting food. People often refer to it as ‘rice porridge’, but I often associate porridge as something sweet, to me it is more like a savoury rice ‘soup’. Often associated with Chinese cuisine, this humble yet nourishing dish can usually be found in Chinese restaurants during lunch service, typically listed as part of the extensive Dim Sum menu (a selection of small plates and dumplings).

While the recipe is simple, the choice of rice is crucial for achieving that characteristic velvety consistency. To make the best congee at home, Jasmine rice is highly recommended, as its starch content and fragrance contribute to a superior, smoother porridge. If Jasmine rice is unavailable, American long-grain rice is an acceptable substitute that will still yield a satisfying result.

Ingredients

  • 1 cup Jasmine rice
  • 3 litre water
  • 10 ml oil (optional, for silky texture)

Equipment

  • Instant Pot (Pressure Cooker)

Instructions

  1. Wash the rice.

  2. Combine the rice, water, and oil in the Instant Pot.

  3. Secure the lid and set the vent to 'Sealing'.

  4. Cook on High Pressure for 45 minutes.

  5. Allow for a natural pressure release for at least 15 minutes before manually releasing any remaining pressure.

  6. Stir well and serve hot.

  7. (Optional: Season with salt and white pepper to taste and add your favorite toppings).
