2 x Rock Sugar

150 ml coconut milk or cream

30 g Sugar

Instant Pot (Pressure Cooker)
Instructions

Combine the rice, water, and oil in the Instant Pot.

Secure the lid and set the vent to 'Sealing'.

Cook on **High Pressure** for **45 minutes**.

Allow for a natural pressure release for at least 15 minutes before manually releasing any remaining pressure.

In another pot heat up coconut milk with sugar.

Add purple rice to bowl and drizzle the sweet coconut milk to serve.
